Had a nice thick cut steak in the freezer that was calling my name to be made into jerky for my next camping trip. I cut it about 1/8th inch thick strips and pieces. Left a little fat on here and there. Marinated in Green Chili sauce with a little vinegar and Worcestershire sauce. Then sprinkled black pepper, red pepper and siracha on it and dehydrated for 10 hours on 150 degrees. Comes out perfect. I leave it in the oven on the plate for a couple days to finish up on the thick pieces. So good! No nitrates or crap. Gonna make another batch of teriyaki and black pepper.

Batch 2 Pat, like little steaks! The marbling on this meat was perfect, so there should be some real flavor here! Marinated in Worcestershire, vinegar and some brown sugar with black pepper and red pepper flakes.
