That is some nice area to ride.
I have ridden Brimstone and have wanted to ride the Renfro dual sport and have friends that ride Red Bird and say it is a must ride area. The KAT runs along or runs with some of those areas. Wish it was closer for a long weekend single track run.

It could certainly be done on our Beta/KTM/YZ whatever 2Ts but there is still a lot of dirt roads and twisty pavement in between.

If you plan to lay down the 1,000 miles they traveled you want a bike that is comfortable to run the back roads. That would be one long buzzy ride on a 2-stroke.
That general area is loaded with plenty off great riding that no plate is require. Harlan County / Brimstone / Windrock and Redbird to name a few.

I'd like to do this. Given the choice between the V-Strom or the KTM 450, the 450 is the right tool for that trip. It all depends on money/timing for me. I'll definitely need a bigger fuel tank for this and probably one of those giant loop thingies.

Can we skip that motel where they make meth, leave needles in the beds, and only turn on the hot water at a drip?
